Thai Watermelon Salad
Ingredients
For the Salad

cubed watermelon

cups
cubed cucumber

small shallots
very thinly sliced
1/4
cup
fresh mint
shredded

Thai red chili
finely sliced
1/4
cup
Thai basil
shredded
1/3
cup
toasted cashews
chopped
For the Dressing
1
tbsp
sesame oil
1
tsp
grated ginger
1/2
tsp
lime zest
2
tsp
lime juice
1/2
tbsp
fish sauce
1
tbsp
coconut aminos
1
tbsp
orange juice
(squeezed fresh from an orange)
1
tbsp
orange juice
Instructions
In a small bowl whisk together all of the ingredients for the dressing. Set Aside.
Prepare salad toppings and set aside.
In a large bowl or serving platter place the watermelon and cucumber.
Pour the dressing overtop and gently tossed until well combined.
Top with the sliced shallots, cashews, sliced chili, mint and Thai basil.
Serve, and enjoy!
