Zesty Buffalo Chicken Salad

It’s time to spice things up (literally!). This divine buffalo chicken salad is easy to make and adds a powerful punch of flavor. Its perfect serves over a garden salad, in a lettuce “wrap” or served as a dip with some fresh veggies. You don’t want to miss out on this recipe!

Ingredients
  • 1 lb boneless skinless chicken breasts or tenders
  • 1 stalk celery diced finely
  • 1/4 red onion diced
  • 1/4 cup buffalo sauce more if needed
  • 2 TBSP siracha optional, for added spice
  • 1/4 cup veganaise more if needed for desired texture

Cook Time 15 minutes

Ingredients
  • 1 lb boneless skinless chicken breasts or tenders
  • 1 stalk celery diced finely
  • 1/4 red onion diced
  • 1/4 cup buffalo sauce more if needed
  • 2 TBSP siracha optional, for added spice
  • 1/4 cup veganaise more if needed for desired texture
Instructions
  1. Boil chicken until fully cooked (about 7-12 minutes, depending on size of chicken breast). set aside on a plate to cool.
  2. Once cooled, add chicken to food processor and pulse to break up. add in buffalo sauce, optional siracha, and veganaise. Pulse to combine. If it needs more moisture, add in more veganaise or buffalo sauce.
  3. Once fully combined, transfer to a bowl and mix in diced celery and red onion. Serve and enjoy!
