Ingredients

olive or avocado oil

shallot
diced

cauliflower rice

chicken broth or bone broth

fresh chopped cilantro
plus some for garnish
sea salt and black pepper
to taste
Instructions
heat a skillet over medium-high heat. Once hot, sauté shallots for 2-3 minutes, until slightly softened. Add in minced garlic, stir for 45 seconds.
Add in riced cauliflower and cook for 4-5 minutes, stirring frequently.
Add in chicken stock, tomatoes, spices, and lime juice. Cook, stirring frequently, until all the excess liquid evaporates (about 5 minutes).
Transfer the rice to a serving side and garnish with extra cilantro and lime wedges.
