- 1.5 oz smoked salmon filet cut into chunks
- 1 egg
- 1 shallots sliced
- 2 cups baby spinach
- 1 tblsp unsweetened coconut milk
- fresh chives minced
- 1 tsp butter
- Himalayan sea salt
- freshly ground pepper

1. Preheat your oven to 350 F.
2. Preheat a skillet to a medium heat, and melt the butter.
3. Add the shallots to the pan, and cook until soft, about 4 minutes.
4. Add the spinach and cook until wilted.
5. Pour in the coconut milk, season to taste, and cook for another minute.
6. Add the spinach and make a small well in the center of the spinach and crack in an egg and add the salmon.
7. Place in the oven and bake for 12 to 15 minutes.
8. Sprinkle with fresh chives to serve.
