1. Preheat oven to 425 F.
2. Add the zucchini to a large bowl
3. Sprinkle in the extra virgin olive oil, garlic, chili powder, paprika, cumin, and cayenne pepper; season with Himalayan sea salt and pepper to taste.
4. Toss everything until well coated and place on a baking sheet.
5. Bake in the oven 20 to 25 minutes.
6. Serve the zucchini topped with fresh cilantro.
