It’s officially spring, which means it’s officially almost summer. Warmer weather calls for fresh, delicious salads. This Thai Watermelon salad is one of our most flavorful options and a personal favorite of mine. Chunks of sweet watermelon and fresh cucumber tossed in Thai dressing and served with chilies and cashews. Definitely worth a try!

Ingredients
For the Salad
- 4 cups cubed watermelon
- 1 1/2 cups cubed cucumber
- 2 small shallots very thinly sliced
- 1/4 cup fresh mint shredded
- 1 Thai red chili finely sliced
- 1/4 cup Thai basil shredded
- 1/3 cup toasted cashews chopped
For the Dressing
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp lime zest
- 2 tsp lime juice
- 1/2 tbsp fish sauce
- 1 tbsp coconut aminos
- 1 tbsp orange juice (squeezed fresh from an orange)
- 1 tbsp orange juice

Instructions
- In a small bowl whisk together all of the ingredients for the dressing. Set Aside.
- Prepare salad toppings and set aside.
- In a large bowl or serving platter place the watermelon and cucumber.
- Pour the dressing overtop and gently tossed until well combined.
- Top with the sliced shallots, cashews, sliced chili, mint and Thai basil.
- Serve, and enjoy!
