Thai Watermelon Salad

It’s officially spring, which means it’s officially almost summer. Warmer weather calls for fresh, delicious salads. This Thai Watermelon salad is one of our most flavorful options and a personal favorite of mine. Chunks of sweet watermelon and fresh cucumber tossed in Thai dressing and served with chilies and cashews. Definitely worth a try!

Ingredients
For the Salad
  • 4 cups cubed watermelon
  • 1 1/2 cups cubed cucumber
  • 2 small shallots very thinly sliced
  • 1/4 cup fresh mint shredded
  • 1 Thai red chili finely sliced
  • 1/4 cup Thai basil shredded
  • 1/3 cup toasted cashews chopped
For the Dressing
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp lime zest
  • 2 tsp lime juice
  • 1/2 tbsp fish sauce
  • 1 tbsp coconut aminos
  • 1 tbsp orange juice (squeezed fresh from an orange)
  • 1 tbsp orange juice

Instructions
  1. In a small bowl whisk together all of the ingredients for the dressing. Set Aside.
  2. Prepare salad toppings and set aside.

  3. In a large bowl or serving platter place the watermelon and cucumber.

  4. Pour the dressing overtop and gently tossed until well combined.
