Ingredients
- 1/2 cup grape tomatoes halved
- 1 1/2 cup asparagus trimmed and cut into 1 inch pieces
- 1/8 avocado cut into cubes
- 1/2 cup sliced basil leaves
- 1-2 tsp extra virgin olive oil
- 1 tblsp lemon juice
- 2 tsp dijon mustard
- 1/2 tsp Himalayan sea salt
- 1/2 tsp ground black pepper

Recipe Notes
1. Steam asparagus for 5-7 minutes until fork tender.
2. Place asparagus, tomatoes, avocado, and basil in a large bowl.
3. Stir in extra virgin olive oil, lemon juice, and mustard.
4. Sprinkle with Himalayan sea salt and pepper. Serve. Goes great with eggs for breakfast in the morning or a serving of fish for dinner at night!
