Ingredients
  • 1 cup cherry tomatoes halved
  • 1 English Cucumber sliced
  • 1 avocado diced
  • 1/2 red onion halved & sliced thin
  • 1 TBSP parsley finely chopped
  • 2 TBSP olive oil
  • 1 TBSP lemon juice
  • himalayan salt and black pepper to taste

  • 1 cup cherry tomatoes halved
  • 1 English Cucumber sliced
  • 1 avocado diced
  • 1/2 red onion halved & sliced thin
  • 1 TBSP parsley finely chopped
  • 2 TBSP olive oil
  • 1 TBSP lemon juice
  • himalayan salt and black pepper to taste
Avocado, Cucumber, and Tomato Salad
Instructions
  1. Add cherry tomatoes, cucumber, avocado, and red onion in a salad bowl.
  2. Pour olive oil and lemon juice over salad, and season with salt and pepper. Mix salad and sprinkle with fresh chopped parsley.
Recipe Notes

1 Serving is 1/4 of the salad

Each portion contains 2 servings fat, 1 serving veg
