Mexican Cauliflower Rice

The perfect easy and quick side dish to add to your family taco night! It takes about 15 minutes to prepare and is packed with tons of flavor! Mexican Cauliflower Rice is perfect over a fiesta salad, alongside some lettuce wrap tacos, or as part of a make-your-own burrito bowl! Try it out today!

Ingredients
  • 4 tsp olive or avocado oil
  • 1 large shallot diced
  • 2-3 cloves garlic minced
  • 3 cups cauliflower rice
  • 1/4 cup chicken broth or bone broth
  • 2 small tomatoes diced
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • 3 TBSP fresh chopped cilantro plus some for garnish
  • sea salt and black pepper to taste

Mexican Cauliflower Rice
Instructions
  1. heat a skillet over medium-high heat. Once hot, sauté shallots for 2-3 minutes, until slightly softened. Add in minced garlic, stir for 45 seconds.
  2. Add in riced cauliflower and cook for 4-5 minutes, stirring frequently.
  3. Add in chicken stock, tomatoes, spices, and lime juice. Cook, stirring frequently, until all the excess liquid evaporates (about 5 minutes).
  4. Transfer the rice to a serving side and garnish with extra cilantro and lime wedges.
