Ingredients
- 4 4oz boneless skinless salmon filets
- 1 TBSP smoked paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1 tsp garlic powder
- 2 TBSP almond flour
- 1/3 cup unsweetened shredded coconut
- 2 eggs beated
- 1 pinch cayenne or chili pepper optional, if you like heat

Instructions
- Preheat your oven to 400 degrees F. Crack two eggs into a shallow bowl and whisk.
- In a small bowl, combine all spices. In separate shallow bowl, combine coconut and almond flour. Set both aside.
- Sprinkle the slice mixture evenly over each salmon filet and rub it in with your fingers.
- Dip the top of each salmon filet into the egg, then press into the coconut and almond flour mixture. Sprinkle any remaining coconut over the tops of the filets.
- Place the salmon filets on a wire rack over a baking sheet. bake for 10-14 minutes, until salmon is cooked through.
