1. In a large skillet, heat 1 tablespoon butter over medium heat. Add chicken breasts; cook 5-6 minutes on each side, or until a meat thermometer reads 165 degrees. Meanwhile, in a small bowl, mix stevia, cinnamon, nutmeg and salt.
2. Remove chicken; keep warm. Add apples, almonds, cinnamon mixture and remaining butter to pan. cook and stir until apples are tender. Serve with chicken.
Yield – 8 servings (depending on cooked weight of chicken breasts).
