Coconut Crusted Salmon

This recipe is the perfect family-friendly weeknight meal. Its easy to make and healthy, yet decadent. The juicy, flavorful salmon pairs so perfectly with the sweet crunchy coconut. This salmon is perfect to serve with a fresh side salad or with some garlicy broccoli or cauliflower rice!

Ingredients
  • 4 4oz boneless skinless salmon filets
  • 1 TBSP smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1 tsp garlic powder
  • 2 TBSP almond flour
  • 1/3 cup unsweetened shredded coconut
  • 2 eggs beated
  • 1 pinch cayenne or chili pepper optional, if you like heat

Ingredients
  • 4 4oz boneless skinless salmon filets
  • 1 TBSP smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1 tsp garlic powder
  • 2 TBSP almond flour
  • 1/3 cup unsweetened shredded coconut
  • 2 eggs beated
  • 1 pinch cayenne or chili pepper optional, if you like heat
Instructions
  1. Preheat your oven to 400 degrees F. Crack two eggs into a shallow bowl and whisk.
  2. In a small bowl, combine all spices. In separate shallow bowl, combine coconut and almond flour. Set both aside.
  3. Sprinkle the slice mixture evenly over each salmon filet and rub it in with your fingers.
  4. Dip the top of each salmon filet into the egg, then press into the coconut and almond flour mixture. Sprinkle any remaining coconut over the tops of the filets.
  5. Place the salmon filets on a wire rack over a baking sheet. bake for 10-14 minutes, until salmon is cooked through.
Recipe Notes

1 filet is 1 serving. Each serving contains 1 protein and 1 serving healthy fat.

This dish is excellent served with a fresh side salad!
