Ingredients
- 4 tsp olive or avocado oil
- 1 large shallot diced
- 2-3 cloves garlic minced
- 3 cups cauliflower rice
- 1/4 cup chicken broth or bone broth
- 2 small tomatoes diced
- 1 tsp paprika
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 3 TBSP fresh chopped cilantro plus some for garnish
- sea salt and black pepper to taste

Instructions
- heat a skillet over medium-high heat. Once hot, sauté shallots for 2-3 minutes, until slightly softened. Add in minced garlic, stir for 45 seconds.
- Add in riced cauliflower and cook for 4-5 minutes, stirring frequently.
- Add in chicken stock, tomatoes, spices, and lime juice. Cook, stirring frequently, until all the excess liquid evaporates (about 5 minutes).
- Transfer the rice to a serving side and garnish with extra cilantro and lime wedges.
