- 2 eggs
- 2 mushrooms
- 1 green onion
- 1 tsp coconut oil
- 1/8 avocado
- 1/2 tomato
- fresh basil for garnish

Recipe Notes
1. In a medium to large skillet, scramble the eggs, mushrooms, and green onions in the coconut oil.
2. Once done, transfer to a plate and top with the avocado, tomato and basil. Don’t skimp on the basil! Add Himalayan sea salt and pepper to taste and enjoy.
