Ingredients
- 2 lbs ground bison may substitute ground beef
- 1 large yellow onion diced
- 8 cloves garlic minced
- 1 4oz can diced green chilis
- 1 butternut squash peeled and cut in 12 inch cubes about 3 cups
- 2 28 oz cans of fire roasted diced tomatoes undrained
- 2 cups chicken or beef broth
- 2 tblsp ground chili pepper
- 2 tblsp ground cumin
- 1/2 tsp ground chipotle or ancho chili pepper
- 2 tsp Himalayan sea salt
- 1/2 tsp black pepper

Recipe Notes
1. In a large skillet over medium heat, cook ground bison until just cooked through.
2. Transfer to the slow cooker. Add remaining ingredients, cover and cook on low for 6-8 hours or until butternut squash are tender.
3. Serve with additional toppings as desired.
Serving Size = 3 ounces of chili and 2 cups of vegetables
