French Onion Soup

Healthy never tasted so good. It’s getting chilly out, and what better way to cozy up than with a hot cup of soup? Check out this lightened up French Onion Soup – it’s gluten free, dairy free, and packed with flavor! Perfect on its own or as a side dish to any meal!

French Onion Soup
The perfect comfort food for all seasons. This classic dish is takes very little prep works and delivers big on flavor.
French Onion Soup

Prep Time 15 minutes
Cook Time 40 minutes

Ingredients
  • 5 onions
  • 3 cloves garlic
  • 4 cups beef stock/broth
  • 1 1/2 tbsp almond flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2-3 drops liquid stevia
  • 1 tsp salt
  • 1/2 tsp pepper

  • 5 onions
  • 3 cloves garlic
  • 4 cups beef stock/broth
  • 1 1/2 tbsp almond flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2-3 drops liquid stevia
  • 1 tsp salt
  • 1/2 tsp pepper
French Onion Soup
Instructions
  1. Peel and slice onions thinly.
  2. In a large pot, melt the butter over low heat, then add in the olive oil. Add in sliced onion, salt and liquid stevia, stir, and cover. Cook for 20 minutes, stirring occasionally.
  3. Peel and mince the garlic, add it to the onion. Continue to cook the onion and garlic without a lid until you get a deep golden brown (but not burnt) color.
  4. Add in almond flour and stir, then pour in beef stock. Cover and cook another 20 minutes. Serve hot.
Recipe Notes

1 serving soup (approximately 1 cup) contains 1 serving vegetables and 2 servings fat

 

*tip: add in 3oz shredded rotisserie chicken (no skin) for some extra protein and flavor!
