- 1-2 tsp grass fed butter or extra virgin olive oil
- 3 garlic cloves minced
- 1 cup onion sliced
- 1 lb organic boneless chicken breast cut into cubes
- 1 lemon juiced
- 1/4 cup fresh parsley chopped
- 1 cup cauliflower rice
- 1/2 tsp garlic granules
- Himalayan sea salt pinch
- ground pepper pinch
Ingredients

1. In a skillet heat butter or extra virgin olive oil and garlic
2. Add in onion and sauté for 2 minutes
3. Add in cubed chicken breasts and sear on both sides for 1-2 minutes (it does not need to fully cook- it will later)
4. Add in 1 cup cauliflower rice and mix it around for 1 minute
5. Add in lemon juice, parsley, and spices
6. Bring to a boil then reduce heat, cover, and let simmer until chicken is cooked through
7. Serve with additional pepper, red pepper flakes, parsley, and lemon slices
Serving Size = 3 ounces of chicken with the cauliflower rice
