Curried Vegetable Skillet with Fried Eggs!

Ingredients
  • 2 tsp coconut oil divided
  • 1 tblsp curry powder
  • 1 cup baby spinach
  • 1 cup leeks sliced
  • 2 garlic cloves minced
  • 2 eggs
  • himalyan sea salt and pepper to taste

  • 2 tsp coconut oil divided
  • 1 tblsp curry powder
  • 1 cup baby spinach
  • 1 cup leeks sliced

  • 2 eggs
  • himalyan sea salt and pepper to taste
Curried Vegetable Skillet with Fried Eggs!
Recipe Notes
1. Heat half the coconut oil in a large skillet. Add the vegetables and cook until soft. Stir in the curry powder, cook for an additional minute, and then turn off heat.
2. Heat a nonstick skillet over medium high heat. Add the remaining coconut oil and fry the eggs to your liking.
3. Serve the eggs on top of the vegetables
This recipe makes 1 serving. Each serving has 2 ounces of protein and 2 servings of vegetable and 2 servings of Essential Fatty Acid on Access Health Inc plan
