- 2 tsp coconut oil divided
- 1 tblsp curry powder
- 1 cup baby spinach
- 1 cup leeks sliced
- 2 garlic cloves minced
- 2 eggs
- himalyan sea salt and pepper to taste

Recipe Notes
1. Heat half the coconut oil in a large skillet. Add the vegetables and cook until soft. Stir in the curry powder, cook for an additional minute, and then turn off heat.
2. Heat a nonstick skillet over medium high heat. Add the remaining coconut oil and fry the eggs to your liking.
3. Serve the eggs on top of the vegetables
