- 2 eggs
- 1/2 cup bell pepper chopped
- 1/2 cup onion large, chopped
- 2 tsp coconut oil
- 1 cup Kale destemmed and coarsely chopped
- Himalayan sea salt to taste
- pepper to taste

Recipe Notes
1. In a skillet, sauté the onion and bell pepper in the coconut oil until they just begin to become soft. Add the kale and cook until it begins to welt. Then, add in the eggs and stir continuously to scramble the eggs.
