1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. Rub the mushroom with extra virgin olive oil and place it on the baking sheet. Bake for 7 minutes.
3. Brown the ground beef in a skillet over medium heat. Stir in cumin and Himalayan sea salt to coat. Fill the mushroom with the ground beef and top with red onion, tomato and cilantro.
