Ingredients
Dressing
- 1/3 cup fresh lemon juice
- 2 tsp whole grain dijon mustard regular dijon works too
- 1 tsp Himalayan sea salt
- 1/2 tsp freshly ground pepper
- 1/3 cup extra virgin olive oil
- liquid stevia optional (few drops)
Salad
- 10 oz baby arugula
- 1 cup fresh strawberries hulled and sliced
- 1/2 small red onion sliced

Recipe Notes
1. Combine the dressing ingredients in a small bowl or a jar with a fitted lid. Whisk or shake until emulsified.
2. In a large roomy bowl, add the arugula and some of the dressing. Toss to coat the arugula. Add the remaining salad ingredients and more dressing. Toss gently.
Serving Size = 2 cups of salad, 1 cup of strawberries with 2 teaspoons of dressing
