  1. Measure out and combine all dry seasonings in a small bowl. Set aside.
  2. Chop onion and mince garlic. Set aside.
  3. chop chicken into bite-size pieces. Pat try with paper towel, season with a sprinkle of salt and pepper, and set aside.
  4. In a large pot or nonstick skillet, heat the oil over medium-high heat. Once hot, add in chopped onion and sauté until soft, about 3 minutes. Add in minced garlic and cook another 1-2 minutes.
  5. Push the onions to the side of the pan and add in chicken, in a single layer. Do not crown the pan with chicken, cook it in batches if needed. Allow to cook undisturbed for 2-3 minutes per side, or until golden brown (the chicken will finish cooking gin the sauce).
  6. Turn the heat to medium. Stir in the dry seasonings and mix everything until the chicken and onions are well coated and the spices are fragrant.
  7. Stir in tomato sauce, tomato paste, and chicken broth. Simmer for 5-10 minutes, until the sauce thickens slightly.
  8. Stir in coconut milk and serve over cauliflower rice!

**1 serving = 3oz chicken, 1/2 cup cauliflower rice, and 1/3 cup sauce. Each serving contains 1 protein, 1 vegetable, and 1 serving fat

***You can use chicken breasts, but chicken thighs are much more juicy and tender.
