Strawberry Chicken Spinach Salad with Citrus Dressing

Ingredients
Salad Ingredients
  • 1/3 cup red onion slices
  • 1/3 cup cucumber slices
  • 1 cup strawberries chopped
  • 1/3 cup roasted asparagus chopped
  • 1/8 avocado chopped
  • roasted almonds
  • 3 oz grilled or baked skinless chicken breast
  • 1 cup spinach
Citrus Dressing
  • 1/2 cup fresh grapefruit juice
  • liquid stevia to taste
  • 1/2 tsp Himalayan sea salt
  • 1/4 tsp ground pepper
  • 1 tsp dijon mustard no sugar added
  • 1 clove garlic
  • 1 tsp extra virgin olive oil

Strawberry Chicken Spinach Salad with Citrus Dressing
Recipe Notes
1. Make dressing by whisking together all ingredients.

2. Layer salad ingredients in mason jar if you choose. Start layering in this order: citrus dressing, onions, cucumbers, strawberries, asparagus, chicken, avocado OR almonds and spinach.

3. When ready to serve, shake mason jar and pour into a bowl.
