Avocado Tuna Salad

Ingredients
  • 1 1/4 cup spinach or spring mix or arugula
  • 1/8 avocado diced
  • 1/4 cup celery stalks finely chopped
  • 1 green apple diced
  • 1/2 cup long English cucumber peeled and finely chopped
  • 1/4 cup dill parsley or cilantro finely chopped
  • 3 oz tuna packed in water well drained
dressing
  • 1 tblsp extra virgin olive oil
  • 1 tblsp dijon mustard
  • 1 tblsp apple cider vinegar
  • 3/4 tsp garlic powder or onion powder
  • 3/4 tsp Himalayan sea salt
  • 1/4 tsp cumin ground
  • ground black pepper to taste

Avocado Tuna Salad
Recipe Notes

1. In a large salad bowl, add all salad ingredients.

2. In a small bowl or measuring cup, whisk together the dressing ingredients. Pour over salad and gently stir to combine.

This recipe makes 1 serving. This equates to the serving having - 3 ounces of Protein, 1 serving of Fruit, 2 servings of Vegetables, and 2 servings of Healthy Fat on the Access Health Plan
